LAUKI KOFTA CURRY
Lauki/bottlegourd/dudhi/ghia is a rich source of vitamin C and calcium and high in water content vegetable which helps in maintaining healthy heart and cholesterol levels. The juice of bottle gourd helps in stabilizing blood sugar level and blood sugar level and blood pressure and so it is beneficial to diabetic patients.
Lauki kofta curry is a delcious curry which is prepared with onion-tomato based creamy gravy with melt in mouth ,soft bottle gourd koftas. Generally in every kofta based curry, koftas are prepared with potatoes. In this curry, no potatoes are used for koftas. So this curry is healthy and easy to digest too.
Ingredients and spices that need to be Make ready to make Lauki kofta curry:
- For kofta: 1 medium sized bottle gourd
- 1 tbsp finely chopped coriander
- 1/4 cup gram flour
- 2 tbsp rice flour
- 1/2 tsp red chilli powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- Salt to taste
- 4 tbsp corn flour (for coating)
- Oil for frying
- For gravy:
- 1 tbsp oil
- 3 roughly chopped onions
- 8 cloves garlic
- 5 roughly chopped tomatoes
- 10 cashew nuts
- Other ingredients:
- 1 tbsp oil
- 1 tbsp ghee
- 1 bay leaf
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp cumin-coriander powder
- 1 tsp garam masala
- 1 tbsp kasuri methi
- 1/2 cup curd(whipped)
- For garnish:
- Finely chopped coriander
Instructions to make to make Lauki kofta curry
- For gravy, heat oil in pressure pan and saute onion garlic then add tomatoes and saute. Lastly add cashew nuts and then close the lid, pressure cook it for 3 whistles.


- Once it cools down,blend it in a puree.
- For koftas: Peel and grate bottle gourd. Squeeze it with hand and keep juice aside.



- Add all kofta ingredients in grated gourd and mix with light hand.

- Prepare small koftas and roll it in cornflour.


- Deep fry it in hot oil and remove it in tissue lined plate.


- For making curry: Heat oil and ghee in a pan, add bay leaf, saute for a few seconds and add prepared gravy and saute for few minutes.

- Add all spices and saute till oil separates.

- Now add curd, squeezed juice of bottle gourd and 1 cup of water, mix well. Cook for 5 minutes on a low flame.

- Lastly add kasuri methi and koftas. Cook for a few minutes and then turn off the heat. Garnish with coriander.



- Serve hot with paratha or rice.



- Notes: You can saute grated bottlegourd to make it dry for well binded koftas.
